Nihari is a popular South Asian dish, especially in Pakistan and India. Here's a simple recipe for Nihari:
Ingredients:
- 1 kg lamb or beef, boneless
- 2 medium onions, chopped
- 2 cloves of garlic, minced
- 1 tablespoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1 teaspoon salt
- 2 tablespoons flour
- 2 tablespoons ghee or oil
- 2 cups water
- 2 tablespoons bone marrow or nihari masala (optional)
Instructions:
1. Heat oil in a pan and sauté onions until golden brown.
2. Add ginger paste, garlic, cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Cook for 2 minutes.
3. Add the lamb or beef and cook until browned.
4. Add flour and cook for 2 minutes.
5. Gradually add water and bring to a boil.
6. Reduce heat and simmer for 2-3 hours or overnight.
7. Garnish with fresh cilantro and serve with naan or rice.
Note: Traditionally, Nihari is cooked in a clay pot over low heat for several hours to tenderize the meat. If using bone marrow or nihari masala, add it during the last hour of cooking.
